I've driven past the Breadsmith on 57th Street maybe two hundred times — that brick storefront tucked between the bank and the dry cleaner, always with cars parked out front at odd hours. For years I assumed it was just another sandwich shop. Then one Saturday morning I actually went inside.

The smell hits you first — yeast and caramelized crust, that deep bread-baking scent that makes your grandmother's kitchen seem like amateur hour. They're pulling loaves out of the oven while you wait, and I mean *actually* pulling them out, not reheating frozen dough. The bakers work behind a half-wall where you can watch the whole operation — flour on their aprons, timers going off, that easy rhythm of people who've made ten thousand loaves and still care about number ten thousand and one.

I bought their sourdough because everyone tells you to buy the sourdough. Crust like tree bark — in a good way — and that proper tang inside, the kind that tells you someone's been feeding a starter for months, not dumping packets of instant yeast into a Hobart mixer. It lasted exactly two days in my house. I went back for the multigrain and some kind of seeded rye that had more texture than most Sioux Falls restaurants manage in an entire menu.

Here's the thing they don't advertise: the hours are limited, and if you show up at 4 p.m. on a weekday, half the shelves are empty. They bake what they bake, and when it's gone, it's gone. Which feels frustrating until you remember that's exactly how bread is supposed to work — made this morning, gone by tonight, start again tomorrow.

It's the opposite of the grocery store bakery sections on Minnesota Avenue, where everything lasts a week because nothing was really alive to begin with.
