Rosy’s Tacos

· 2305 W Madison St, Sioux Falls, SD 57104, USA

I've driven past the strip mall on Madison a hundred times without really seeing it — one of those spots where you register a Subway and maybe a nail salon, but nothing sticks. Then Rosy's opened, and suddenly the whole block had a reason to exist.

It's not much from the outside. Standard storefront, a few tables inside, ordering at the counter. But the first time I went, mid-afternoon on a Thursday, there was already a small crowd — construction guys still in boots, a mom with two kids who clearly came here often enough that the woman behind the counter knew their names. That's the tell. The places that matter in Sioux Falls aren't always the ones with the Instagram lighting.

The menu's tight. Tacos, burritos, tortas — nothing trying to be fusion or elevated, just straightforward and done right. I got three tacos: carnitas, asada, and al pastor. The tortillas were doubled and still barely held together under the weight of the meat. The salsa verde had actual kick, not that watered-down courtesy heat you get at chain spots. The al pastor was the standout — charred edges, pineapple that wasn't an afterthought.

Here's what isn't perfect: the seating. If you come during lunch rush, you might be standing around waiting for a table, and the space feels cramped when it's full. But honestly, that's part of it — the kind of problem that happens when a place is worth the wait.

I've been back three times since. Once after a late meeting, once because I was craving that salsa, once because I was driving down Madison and just... turned in. It's become one of those spots I don't think about recommending anymore — I just assume people already know.
